Roasted Shrimp & Vegetables

Happy Monday everyone!  Today I have a super quick blog post for you that includes a new recipe!  Last night I made this delicious meal which was made up of shrimp, squash, zucchini, and onions.  It was delicious and I made enough that I could eat it throughout the remainder of this week, which is perfect for my packed schedule!

Roasted Shrimp & Vegetabes

Ingredients:

  • One bag of frozen, medium sized shrimp
  • 2 zucchinis
  • 2 squashs
  • 1 yellow onion
  • 3 tbsp. olive oil
  • 1/2 tbsp. black pepper
  • 1 tbsp. Kosher salt
  • 1 tbsp. oregano
  • 1/2 tbsp. red pepper flakes
  • Dash of garlic salt

To start, preheat the oven to 350 degrees.  Next, follow the directions on the package of shrimp to thaw it out.  Slice up your squash, zucchini, and onions.  Put everything in a bowl and add the 3 tablespoons of olive oil, followed by the various spices.  I used my hands and just mixed up the shrimp and vegetables with the oil and spices.  Place the mixture on a cookie sheet (I picked out the shrimp to make my pictures look better but you don’t have to do that lol!).  Place the cookie sheet in the oven for a half an hour.  I served this meal with whole grain rice.  Enjoy!
