Shrimp & Veggies over Pasta

Hey friends!  Welcome back to Simply Kaylee Ann!  If you are new around here, I am Kaylee and I am so grateful that you are checking out my little corner of the internet!  Blogging is something that I have become very passionate about and I feel so blessed that I am able to grow my blog right along with all of you!

Upon entering the season of Lent, I follow the tradition of not eating meat on Fridays.  Typically, I will substitute my normal choice of chicken with some kind of fish.  Though when I am in a pinch mac n cheese or a grilled cheese works just as well! 😉  Below, I am sharing one of my favorite recipes for the Lenton season.

Shrimp & Veggies over Pasta



  • One bag of frozen, medium sized shrimp
  • One box of whole grain spaghetti
  • 3 heaping handfuls of spinach
  • 20 sliced cherry tomatoes
  • 10 diced portabello mushrooms
  • Half of yellow onion, diced
  • Two tbsp. olive oil
  • One tbsp. garlic
  • One tbsp. red pepper flakes
  • One tsp. red chili powder
  • Salt and pepper to taste
  • Mozzarella cheese if desired

To make this meal, begin by putting your water on to boil for your noodles.  You can follow the directions on the pasta packaging to make it.  I then went ahead and used a frying pan to heat the olive oil and sauté the onions, garlic, and spices.  Once the onions were a golden brown, I added the tomatoes and mushrooms.  I personally follow the instructions on the packaging to thaw my shrimp.  I added in my thawed shrimp and let that cook.  I finally added the spinach and let that cook down.  Mix the fish and veggies together in the pan.  Serve the shrimp and veggies over the pasta, and add a little Mozzarella cheese if your heart desires!  Enjoy!

Well that is all I have for today folks!  Hopefully, this meal adds a little variety to your line up if you also go meatless on Fridays during the season of Lent!  It can never hurt to change it up every now and then.
