Kielbasa, Pepper, Onion, and Potato Hash

Hey all!!  I am back with yet another recipe to share with you guys.  This is such a delicious meal that my family and I enjoy often!  We had it last night for dinner and I thought I would pass it along to you.

Kielbasa, Pepper, Onion, and Potato Hash

Ingredients:

  • 1 14 oz. package of turkey kielbasa, cut into 1/4 inches
  • 1 red bell pepper, diced
  • 1/2 yellow or orange pepper, diced
  • 1 onion, diced
  • 2 large potatoes, diced
  • 3 tbsp. olive oil
  • Salt and pepper to taste

In a skillet pan, heat 2 tbsp. of olive oil over a medium to high heat.  Add the potatoes to the skillet and season them with salt and pepper.  Sauté them until they are golden brown and cooked through.  Stir them a few times to ensure they are browned on all sides.  In a separate skillet, brown the kielbasa in one tbsp. of olive oil in medium to high heat as well.  Remove the kielbasa from this pan and set them to the side.  Add the peppers and onions to the skillet and season it with salt and pepper.  Cook until they are softened.  Add the cooked potatoes and the kielbasa to the peppers and onions.  Mix everything together.  Serve and enjoy!
