Hello lovelies! Happy Tuesday! I am so happy to be sitting here, writing to you today! It is a chillier day in the Burgh, but nonetheless, the sun is shining and it is a beautiful day. I am excited about this blog post, as this is something I make quite often when I am at school. I came up with this from the Chipotle Burrito Bowl because I wanted something similar to it that I could just make from home!
- Ground chicken
- 1 taco seasoning packet
- 1 bag of Steam Fresh frozen brown rice
- 1 can of black beans
- 1 red pepper
- 1 orange pepper
- 1 medium white onion
- Shredded lettuce
- 1/2 cup chopped cilantro
- 2 tbsp. lime juice
- Holy Guacamole!!!
- Dad’s Homemade Salsa
- Plain Greek yogurt (optional)
- Shredded cheese (optional)
To make your bowl, first start by browning the ground chicken in a nonstick pan. While the chicken is browning, slice your peppers and onion. Once the chicken is browned, mix in the taco season packet and follow the directions on the packet. Take the chicken
out of the pan, rinse the pan, and heat up the peppers and onions. Put your rice in the microwave based on what it says on the packet. Once the rice is finished, pour it into a bowl. Add the cilantro an lime juice to the rice and stir it.
When all the ingredients are finished, we line everything up, buffet style, to make our bowls. Pick your toppings and create your bowl. We will usually use a large soup bowl to eat these, as to replicate the Chipotle bowl.
