Spicy Lime Grilled Shrimp with Avocado Dressing

Hello all!  I have a new recipe for you guys that I personally loved!  It was super yummy and healthy too, which is always a plus!  It has avocados and shrimp in it so, basically, what is not to love?!

Spicy Lime Grilled Shrimp with Avocado Dressing

Ingredients:

Shrimp:

1 lb. of shrimp, peeled and deveined

Juice of one large lime

3 tbsp. olive oil

2 cloves garlic, minced

2 tsp. chili powder

1/2 tsp. cumin

1/4 tsp. paprika

1/2 tsp. salt

1/4 tsp. ground black pepper

1/4 tsp. red pepper flakes

Dressing:

1 avocado

1/2 cup low fat Greek yogurt

1 clove garlic, minced

Juice of one large lime

2 tbsp. cilantro, chopped

Salt and pepper to taste

To make the shrimp, mix together lime juice, olive oil, garlic, chili powder, cumin, paprika, salt, pepper, and red pepper flakes in a small bowl.  Put shrimp in a container and pour mixture over.  Make sure shrimp is evenly coated.  Let it marinate in refrigerator for 30 minutes.  Preheat the grill to a medium heat.  Put the shrimp on skewers and then place them on the grill.  Grill the skewers on each side for about two minutes or until they are no longer pink.

To make the avocado dressing, add avocado, Greek yogurt, garlic, lime, and cilantro to food processor.  Pulse the mixture in the food processor until smooth.  Add in salt and pepper to taste and serve immediately with the shrimp!
