Protein Peanut Butter Mini Muffins
1 large ripe banana
1 large egg at room temperature
1/2 cup of organic crunchy peanut butter
2 teaspoons of your choice of vanilla protein powder
2 tablespoons of organic honey
1 teaspoon of vanilla extract
1/8 teaspoon of salt
Preheat your oven 375 degrees and coat the bottom of your muffin pan with baking spray and flour. In a bowl, cream the banana with a spoon until smooth. Then add the egg and repeat the stirring. Next, add the crunchy peanut butter and, again, repeat the stirring. Finally, add the rest of the ingredients (honey, vanilla extract, protein powder, and salt). I chose to use a vanilla chai protein powder to add a little cinnamon to the mix! Bake for 14-16 minutes or until golden brown!
