Quinoa Stuffed Peppers

First of all, Happy St. Patrick’s Day! I wish I had green peppers to have been able to make this dinner a little more festive!

But anyways…. peppers are not my favorite food so in order for me to even consider eating them, they have to be disguised in some way. This weekend while I was grocery shopping, I got the idea to make some stuffed peppers! Read on to find the recipe…


Quinoa Stuffed Peppersimage


1/4 cup of quinoa

1 red bell pepper

Half of an avacodo

1/2 cup of black beans

6 sliced cherry tomatoes

4 sliced black olives

1/4 cup of taco mix cheese

Crushed red pepper to taste

Salt and pepper to taste

First I made the quinoa.  To do this, I simply followed the directions on the back of the packaging (I used Wild Oats Traditional Quinoa).  While the quinoa was cooking, I cut the tomatoes, olives, and avocados.  When the quinoa was done cooking, I put the beans, tomatoes, olives, avocados, half of the cheese, crushed red pepper, and salt and pepper in the pan with the quinoa.  After this was all mixed, I put this all into the red pepper, topped it with the rest of the cheese and some more red pepper flakes.  I put the pepper in the oven for about ten minutes.  Serve and enjoy!!

Serves one but can easily multiplied!
